California Shrimp Burgers

Ingredients

  • 1 lb raw shrimp precooked shrimp will crumble
  • 1 tbsp avocado oil olive works too, but watch smoke point
  • 1 ea red bell pepper – diced
  • 1/4 ea red onion (diced)
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 ea tomato (topping)
  • 1 ea red onion (topping)
  • 1 ea arugula any leafy green works
  • 1 ea avocado guac works too
  • 1 ea lime or lime juice
  • 3 ea bun of choice

Instructions

  • Blend shrimp in a food processor, or blender until minced finely
  • Mix in avocade oil, cumin, smoked paprika and chili powder
  • Cut red onion into slices, then dice about 1/4 of the red onion into small pieces, set the rest aside for topping
  • dice red pepper into small pieces
  • mix red onion and bell pepper into the shrimp mixture and form (3) patties
  • firm the patties in the fridge for 20 minutes
  • prepare toppings – mash the avocado, slice tomato and wash arugula
  • set stainless steel or cast iron pan to medium heat on the stovetop (use preferred cooking oil)
  • place patties on the stovetop and cook until firm
  • Serve on a burger bun of your choice with toppings and a squeeze of lime juice
