Blueberry Lemon Oatmeal Breakfast Bake
Easy and Fast Breakfast Bake, Great for Meal Prep

Ingredients
- 2 cups rolled oats
- 2 cups milk
- 1 cup blueberries fresh or frozen doesn't matter
- 2 ea eggs
- 1/4 cup honey can substitute other sweetener
- 1 ea zest from 1 lemon
- 3 tsp lemon juice
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1 pinch salt
- 2 teabags lavender tea (optional)
Instructions
- Preheat oven to 375
- heat but don't boil milk
- steep teabags in milk for 5 minutes
- mix all ingredients together except blueberries
- fold in blueberries (this is so you don't smash them)
- pour mixture into greased baking dish (8×8 or 9×9)
- bake for 35-40 minutes until set in center of oven
- let cool for 10 minutes, serve and enjoy
Notes
Great when served with greek yogurt or cottage cheese.
