Mahi Mahi In Lemon Tomato Basil Sauce

Pan-seared mahi mahi with cherry tomatoes, garlic, and fresh basil in a light lemon pan sauce.

Ingredients

  • 4 fillets Mahi Mahi Fillets
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp avocado oil (or olive)
  • 2 cups cherry tomatoes
  • 2/3 cup shallots diced
  • 4 cloves garlic minced
  • 1/2 cup vegetable stock
  • 1 tbsp vinnegar
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 2 tbsp basil chopped

Instructions

  • Pat the fillets dry and add salt and pepper
  • heat olive oil over medium heat
  • cook fillets for 3-4 minutes
  • flip and cook for an additional 2-3 minutes
  • Add cherry tomatoes to pan, allow to blister (approx 4 minutes)
  • add onions and shallots to tomatoes cook until fragrant (60 seconds)
  • Add stock, vinegar, lemon juice and simmer for 4 minutes
  • stir in lemon zest and basil
  • add mahi mahi fillets to pan and spoon the sauce over the fillets
