Mahi Mahi In Lemon Tomato Basil Sauce
Pan-seared mahi mahi with cherry tomatoes, garlic, and fresh basil in a light lemon pan sauce.

Ingredients
- 4 fillets Mahi Mahi Fillets
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 tbsp avocado oil (or olive)
- 2 cups cherry tomatoes
- 2/3 cup shallots diced
- 4 cloves garlic minced
- 1/2 cup vegetable stock
- 1 tbsp vinnegar
- 1 tbsp lemon juice
- 1 tsp lemon zest
- 2 tbsp basil chopped
Instructions
- Pat the fillets dry and add salt and pepper
- heat olive oil over medium heat
- cook fillets for 3-4 minutes
- flip and cook for an additional 2-3 minutes
- Add cherry tomatoes to pan, allow to blister (approx 4 minutes)
- add onions and shallots to tomatoes cook until fragrant (60 seconds)
- Add stock, vinegar, lemon juice and simmer for 4 minutes
- stir in lemon zest and basil
- add mahi mahi fillets to pan and spoon the sauce over the fillets
