Blueberry Lemon Oatmeal Breakfast Bake

Ingredients

  • 2 cups rolled oats
  • 2 cups milk
  • 1 cup blueberries fresh or frozen doesn't matter
  • 2 ea eggs
  • 1/4 cup honey can substitute other sweetener
  • 1 ea zest from 1 lemon
  • 3 tsp lemon juice
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1 pinch salt
  • 2 teabags lavender tea (optional)

Instructions

  • Preheat oven to 375
  • heat but don't boil milk
  • steep teabags in milk for 5 minutes
  • mix all ingredients together except blueberries
  • fold in blueberries (this is so you don't smash them)
  • pour mixture into greased baking dish (8×8 or 9×9)
  • bake for 35-40 minutes until set in center of oven
  • let cool for 10 minutes, serve and enjoy

Notes

Great when served with greek yogurt or cottage cheese.
